Cane Origin: Java varietal Santa Maria Tlalixtac, Oaxaca 2,500-3,800 feet above sea level

Fermentation: In pine tanks with ambient yeasts

Distillation: By Rommel Krassel in a copper alembic pot still

Aging:

  • 2 years in new French Oak

  • 3 months new Hungarian Oak

  • Aged in a dry climate

  • 20% angel’s share

Bottling: Cask strength at 59.7% ABV with no water, sugar, or coloring added. 266 bottles total

Tasting Notes: Aromas of tootsie roll, watermelon rock candy, & wet carpet On the palate, notes of cherry limeade & Manhattan cocktail

ABOUT THE CAÑAMAZO

Cañamazo is a large, nitrogen-fixing tree that can grow up to 80 feet tall. Found in central and South America, this habitat-providing tree bears vibrant red sheaths that house onyx-colored seeds in the month of June. Alongside the Río Blanco, a mature Cañamazo shelters a small Alambique Serrano aging cave.
