PRODUCTION NOTES

Cane Origin: Java varietal Santa Maria Tlalixtac, Oaxaca 2,500-3,800 feet above sea level

Fermentation: Steel + pine tanks with ambient yeasts

Distillation: Los Hermanos Krassel in Krassel Still and copper alembic pot stills

Blend:

  • Krassel Still rum

    • Aged 25 months in new French Oak

    • Finished 4 months in red wine cask

  • Copper alembic pot still rum

    • Aged 28 months in new French Oak

    • Finished 3 months in red wine cask

Bottling: Cask strength at 57.7% ABV with no water, sugar, or coloring added. 574 bottles total.

Tasting Notes: Aromas of lychee, white pear skin, & watermelon rind. On the palate, light notes of cinnamon butter, with apricot, brown sugar, cinnamon toast cereal and a pleasant oiliness.
